縞鯵( シマアジ)一般市面以養殖的居多，野生的縞鯵較少見，單價也較高之外，隨著重量越大而跟著越貴，因為養殖的縞鰺為了穩定平易的價格，跟品質，所以不會刻意養到太大（不合成本，養越大花越多錢，單價會變高）。
縞鯵在味道及口感跟本身的香味也令人著迷，是很淡麗的油脂香氣，尾韻的魚旨味香氣十足卻清盈，與較常見的養殖縞鯵，除了豐富油脂外，天然的縞鰺還是耐吃一點，口感上也能感受魚兒活動的脆彈感。
