鮭魚一般為秋天的食材, 因鮭魚會在秋天迴遊產卵, 途經北海道沿岸而被捕, 時鮭卻是例外. 時鮭又稱"時不知鮭", 是每年春至初夏(5-7月)"走錯路"迴游到北海道沿岸的鮭魚, 體內油脂豐富, 肉質緊實, 再加上是數量少的野生魚, 被日本人視為珍貴食材.
