花咲蟹是只能於根室海到俄羅斯之間才能捕獲到的北海道稀有螃蟹，因捕獲量少，僅能於夏天至秋天品嚐到，十分珍貴。
其甲殼長約20公分，為紅褐色，與甲殼相比其腳較短且粗，且全身佈滿硬棘。
花咲蟹的肉身油脂豐富，味道濃鬱，具有獨特的甜香。其腳部的肉量十足，味道比鱈場蟹更為濃厚。
