墨烏賊 スミイカ Sumi-ika

- 墨烏賊口感爽脆甘甜,從秋天開始旨味會一步步地增強,一直到隔年的春末。
- 喜歡生活在溫暖的淺海地帶,在日本關東地區以西,主產地是瀨戶內海、三河灣和九州
- 壽命只有一年,春至初夏產卵,夏秋是幼烏賊的成長期,秋冬則變為成年墨烏賊,產卵後死去,周而復始
- 夏秋季市面上出售的幼年墨烏賊又稱 新烏賊 (新イカ)
- 墨烏賊以味道柔滑、細膩、甘美著稱 ; 而新烏賊雖然味道不及成年墨烏賊濃厚,但質感更為輕薄柔嫩、肉身通透
