白蝦刺身因其優雅濃郁的甜味融化的質感而廣受歡迎。由於去殼非常耗時間及人力,去殼白蝦比帶殼貴一點。通常會將生白蝦冷凍,讓殼和蝦肉稍微分開以便去殼。
白蝦上岸後立即由淡粉色透明體變為白色,被稱為「富山湾の宝石」。 富山灣白蝦捕撈的旺季是4月至7月,但由於大部分是冷凍的,一年四季都可以吃到。 去殼用於刺身或軍艦壽司都非常方便。
