  ズワイガニ 楚蟹

楚蟹(ズワイガニ) 在香港一般統稱為"松葉蟹",但在日本只會稱山陰地方(鳥取縣島根縣等地區)捕撈的楚蟹為"松葉蟹",另有個別知名產地亦會以地區命名(越前蟹, 間人蟹等) ,其他產地的則只可稱為楚蟹。
楚蟹肉具彈性,鮮嫩多汁,做刺身、鹽煮、清蒸、火鍋或燒烤,用最簡單淳樸的方式烹調已經是人間美味。


  煮蟹方法


1.準備3%鹽水(每1公升水 : 30克鹽(2湯匙)),將水煮至沸騰

2.蟹殼朝下放進水中煮 (*防止蟹膏流出)

3.再次沸騰後,以中火煮約18分鐘。


如果煮完要保存起來,請先用冷水或冰水冷卻蟹,然後再冷藏。
