鮭魚，出生地在乾淨的河川源頭，孵化完成後會游入大海成長。經過3～5年成長後會再回到母川孕育下一代！
北海道日高剛好位在親潮與黑潮的匯合處，充滿豐富的浮游生物，讓每年回來的鮭魚充滿養份。

日高出產的『銀聖』這個稱號是只授予滿足以下嚴格標準的銀鮭: 

1.北海道日高產的銀毛鮭魚
2.嚴格遵守新鮮度
3.重量必須在3.5kg以上（加工前）
4.銀聖的魚身特別完整漂亮

日高捕獲的鮭魚中，只有5-6%符合標準可被稱為『銀聖』!
此外，只有經日高村漁民協會批准並指定的有限數量的商販才能出售銀聖


和市面上的養殖挪威鮭魚不同，日本北海道野生秋鮭帶有高雅清甜清爽的口感，會顛覆您對鮭魚的刻板印象
