松葉蟹，三大名蟹之一，是日本人冬天必吃的高級食材，不同產地的松葉蟹有不同的名稱，如兵庫的津居山蟹，石川的加能蟹，而福井縣的越前蟹是當中最高級、味道最獲好評的。自日本明治時代起，越前蟹每年都會獻給皇室享用。

✓唯獨福井縣4個港口出產的，才可稱作越前蟹
✓產量非常有限，每年11月6日起至來年的3月上旬為解禁期，漁民只獲准在此時期內捕捉松葉蟹

*每隻蟹身均綁有黃色的膠牌，標明其身世
